100 % Gamay noir à jus blanc (Black Gamay with white juice). Handpicked, destemmed grapes, vatting for up to 15 days with a Burgundy-style cold pre-fermentation maceration for 7 days, punching of the cap and delestage to bring out the terroir. This wine matures in barrels or oak casks for several months to obtain roundness, suppleness and develops its bouquet.
