Stellenbosch has a warm maritime climate with high rainfall in the winter period. Temperatures in this winter period are below 20 degrees Celsius. The summer months there are hot, dry and pleasant. With varying influence from the Atlantic Ocean and the Stellenbosch mountains.

100% Chardonnay. Manual picking in the cool of the morning. After 24h, the juice is separated from its lees and new yeast is added. Fermentation for 2 weeks at 12-17 degrees. Some of the wine receives malolactic fermentation. The wine is then transferred to inox tanks where it rests further on its lees for 3-6 months. No wood aging.
