Stellenbosch has a warm maritime climate with high rainfall in the winter period. Temperatures in this winter period are below 20 degrees Celsius. The summer months there are hot , dry and pleasant. With varying influence from the Atlantic Ocean and the Stellenbosch mountains.

Variation of Hutton and Clovely subsoil (Weathered granite) with generally quite a lot of clay. This helps retain water.

Grenache (60%) and Mourvèdre (40%) picked just before optimum ripeness. Full bunches are gently pressed. Short maceration of a few hours (according to colour extraction). Classic fermentation at 12-15° in inox vats for 14 to 20 days. No Malolactic fermentation. Bottling after 5 months.
